Ingredients

For Marinated Chicken Wings

  • 8 chicken wings
  • ¼ cup natural yoghurt
  • 1 tbsp fresh ginger-garlic paste
  • 3 tbsp Tropical Heat Paprika
  • 1 tbsp Tropical Heat Cumin Powder
  • 1 tbsp Tropical Heat Turmeric Powder
  • 2 tbsp Tropical Heat Chilli Powder
  • Tropical Heat Sea Salt, to taste
  • 5 tbsp lemon juice
  • 2 tbsp cooking oilbanner

For Grilled Lamb Cubes

  • 500 g lamb cubes
  • 1 tbsp olive oil
  • 2 tbsp fresh garlic, minced
  • Tropical Heat Meat Tenderiser, as required
  • 1 tbsp Tropical Heat Rosemary
  • Tropical Heat Pepper Medley, to taste

Method

Chicken Wings

  1. In a mixing bowl, combine yoghurt, ginger-garlic paste, paprika, cumin powder, turmeric powder, chilli powder, lemon juice, salt, and oil. Mix well to form a rich marinade.
  2. Add the chicken wings and coat thoroughly. Cover and marinate for at least 1–2 hours, preferably overnight for deeper flavor.
  3. Grill over medium heat or roast in a preheated oven at 180°C until fully cooked and slightly charred, turning occasionally for even cooking.

Lamb Cubes

  1. In a separate bowl, combine lamb cubes with olive oil, minced garlic, meat tenderiser, rosemary, pepper medley, and salt. Mix well.
  2. Allow to marinate for at least 30 minutes to enhance tenderness and flavor.
  3. Grill over medium-high heat until the lamb is cooked to your preferred doneness, with a nicely seared exterior.

Presentation & Serving

Arrange the grilled chicken wings and lamb cubes on a serving platter. Garnish with fresh herbs and lemon wedges for added freshness.


Serving Suggestion

Serve hot with kachumbari (fresh tomato and onion salad), ugali, or flatbread for an authentic and satisfying East African dining experience.
