Rwandan Goat Meat Brochettes (Grilled Skewers)
Brochettes are one of Rwanda’s most popular street foods—simple, flavorful skewers of grilled meat, typically cooked over charcoal and served with chili, salt, and fresh sides. Goat meat is the most traditional choice, but beef, chicken, or fish are also commonly used.
Ingredients
- 500 g goat meat (or beef/chicken), cut into cubes
- 2 tbsp cooking oil
- 2–3 cloves garlic, minced
- 1 small piece fresh ginger, grated
- 1 tsp paprika (optional but common in modern versions)
- 1 tsp chili powder (optional, for heat)
- Salt to taste
- 1 tbsp lemon juice (optional)
- Wooden or metal skewers
Method

Prepare the Meat
Cut the meat into evenly sized cubes to ensure uniform cooking. -
Seasoning / Marination
In a bowl, combine meat with oil, garlic, ginger, salt, and optional spices (paprika, chili, lemon juice).
Mix thoroughly and allow to marinate for at least 30 minutes (traditionally, seasoning can be minimal and done just before grilling). -
Skewering
Thread the meat pieces onto skewers, leaving small gaps between pieces for even heat circulation. -
Grilling
- Preheat a charcoal grill until hot.
- Place skewers over medium heat.
- Grill, turning regularly, until the meat is well-cooked and slightly charred on the outside.

Sprinkle with additional salt or chili just before serving for authentic flavor.
