Matoke in Peanut Sauce with Meat (Beef or Chicken)

Ingredients
Cow meat (beef or chicken)

600 g beef (stewing beef), cut into medium pieces

1 teaspoon salt
-
1 teaspoon garlic (minced)
-
1 teaspoon ginger (grated)

Water (for boiling)
Matoke
-
8–10 green matoke (green bananas), peeled and cut into large pieces
Peanut sauce
-
1 large onion, finely chopped
-
2 ripe tomatoes, finely chopped
-
3–4 tablespoons natural peanut butter (unsweetened)
-
1 tablespoon cooking oil
-
½ teaspoon turmeric
-
½ teaspoon black pepper
-
Salt to taste
Method
-
Cook the cow meat
Place the beef in a pot with salt, garlic, ginger, and enough water to cover.
Bring to a boil, then reduce heat and simmer for 60–90 minutes until the meat is very tender.
Reserve the cooking liquid (stock). -
Prepare the sauce base
In a separate pot, heat the oil over medium heat.
Add the chopped onion and cook until soft and lightly golden.
Add the tomatoes and cook until they break down into a thick sauce. -
Add the peanut sauce
Mix the peanut butter with a little warm water to form a smooth paste.
Add it to the pot together with turmeric, black pepper, and salt.
Cook gently on low heat for about 5 minutes, stirring slowly. -
Add the beef
Add the cooked cow meat to the peanut sauce.
Pour in some of the reserved beef stock and simmer for 5 minutes. -
Cook the matoke in the sauce
Add the matoke pieces directly into the sauce.
Add more beef stock until the matoke is just half covered.
Cover and cook on low heat for 20–25 minutes until the matoke is very soft. -
Mash slightly (important)
Gently mash some of the matoke inside the pot.
This thickens the sauce and gives the creamy texture seen in the picture. -
Rest and serve
Turn off the heat and let the matoke rest for 5 minutes with the lid on.
